Shredded Chicken With a Mixer

Not sure if anyone has seen floating around on Facebook the video clip of whole chicken pieces laying in a crock pot, then the lady/man takes a mixer and starts shredding the chicken!  It was the right timing when I seen this video shared because the following night which was last night I was making tacos and we were wanting chicken tacos. It takes me forever to shred cooked chicken with a fork but with this life hack it was completely awesome and cut the time down to no time.  I'd honestly say at least a minute if that! 

On the way home from dance called my hunny and told him since he would be home before me to go ahead and get the chicken and put it in some water on the stove to boil.  By time I got home it was cooked. While I was getting the ground beef together to start cooking for beef tacos as well, I let the chicken cool down just a bit.

One minute (if that) later, I have shredded chicken for chicken tacos or chicken nachos.

Little League

I am extremely disappointed this year in the lack of coaching support. I signed my son up almost a month ago for little league tball. I called last week wanting to know about when they would be starting practices.  One week from today exactly  they had the coaches meeting. Still after a week I heard no word from anyone regarding my son sons tball team. Today remind you one week after the coaches meeting I was in town and went by the place my son will be playing through. The place that my son playsvtball threw the employees were disappointed too hear we stilll hadn't heard anything. They gave me the coaches name as well as number to contact them myself and after calling all day. Finally got ahold of one coach to let alone to my surprise the coach whose phone kept going straight to voicemail is the head coach and she was suppose to call everyone Monday night to inform the parents that there is a practice Tuesday May 12 at a certain time. Your right that is today and I found out two hours before after already having plans. So my son missed his first practice of the year due to lack of coaching communication. What's even more funny is this coach himself, the one in whom I spoke to, wasn't so sure about anything. And another parent had contacted him curious as to when practices were going to be. This coach didn't even know where the practices took place considering this is his first year.  Sad part is they start games in less than two weeks.

My thought if you are going too volunteer to coach at least follow these guidelines as follows.

1. List a number you can be reached.
2. Similar to number one communication is the key to a successful season especially if ya want your kiddos the to play.
3. Waiting last minute gets you no where. Do as you were instructed at the coach's meeting. Because you were instructed to get a hold of your WHOLE team, not just one or two hoping that need would fly in the wind.
4. Yes I understand its volunteer and no pay but have some compassion/passion. The kids are only 5&6 year olds they get their hearts broke easily.
5. Similar to Number 4, volunteering or not you agreed to o this therefore do it. Don't be so busy with other things. If you work more than I'd say 30 hours a week job and that's pushing it, don't coach tball. If ya have a million and one other things you do that occupy you more than 50% of the time, coaching little league tball is not for you.

Am I angry? A little because after shell in out $50 for my on to play summer tball. I casmt even get the head coach to call me back.

Go To Meal/Easy Meals

          What is Your GO TO MEAL? Meaning what do you fix because it's easy and you don't feel like cooking or what is the meal that you GO TO because that's really all ya have left in the house until pay day! 

           Our Go To Day is today. We are going grocery shopping tomorrow! Our go to meal tho always seems to be Cheeseburgers. At first I absolutely hated making cheeseburgers because they never came out right. A few months prior to the second time I made cheeseburgers (without using premade patty's). We had got some seasoning, called Gourmet Burger by Weber. One night when using it threw a little seasoning salt with it. Bam, we had some awesome tasting cheeseburgers.  

            Although it's our go to meal, it is also at least cooked once every week and if we begin to get burnt out on them we eat them at least every other week.  

            Wednesday, this year during the school and dance year has been busy for me because Ryleigh does dance from 4-6:00pm. Therefor, by time we got home especially during those dreaded winter months. By time we got home, I was getting kids ready for bathes, getting supper cooking, continuing the laundry that is never done, and getting kids ready for the next day along with bed time. So cooking cheeseburgers was easy for me, also some of the time Ken usually got home before us and he would throw in a lasagna, or do spaghetti.  The kids favorite was when we do Little Ceasers Pizza.  Which they get a Cheese Pizza. I order the Italian Cheese Bread* and if ya haven't tried go try it. It's amazing! Well to just about everyone in my household.

Mother's Day Weekend

Saturday:  Saturday was just one hell of a day. I had to go pick up Ryleigh's Dance Costumes. Then that afternoon I curled a few little girls hair for their Eighth Grade Graduation Dance. Mainly just to help out because if anyone has children in Dance age school knows that it begins getting expensive now with these little dresses and what not!  After that I ran to my mothers house to drop off Ryleigh's costumes because she has more space up there. And I'm in the middle of trying to declutter my house. That is the last thing I need is her costumes to come up missing two weeks before recital.  Then later that night Ken and I got the kids to bed and we watched "50 Shades of Grey".  Let me explain that movie was an awesome movie but they hook ya and sink ya. The ending keeps you wanting more. I laughed and said I won't be watching anymore of those movies until they are all out on DVD.  That was my Saturday! Before going to bed. The one thing I asked was I got to sleep in and wake up to the Kids bedroom being picked up! TOYS everywhere.

Sunday: I got to sleep in and boy did I sleep in. I woke up at like 7:30 with a pounding headache. Decided to eat a bowl of cereal and before you know it I fell back asleep and didn't wake up until 12:30. I felt refreshed and that I slept my day away. I went and visited with my mom. Just Brayden and I went. Ryleigh was in one of her moods and just wanted to stay home.  I helped my mom out for a little bit then came home. Nothing too serious.

Now onto Monday: Today is just a rainy crappy day. Therefor I am continuing with the laundry. Fixing to go clean the kitchen up before going and getting the kids later. I hope to have a lot done today just so I can relax this week. I am still waiting to hear from Brayden's TBall coach to find out when he starts TBALL! Other than that if anything eventful happens will update you all. :)

My Heart Smiled Just A Little More

I had a busy day of picking up costumes, doing hair, and came home only to run to town again. I am wore out but got to enjoy my gifts the kids made me. They both were absolutely gorgeous. Something that really touched my heart was the plaque Ry brought home. A lot of people know in the beginning of mine and Ken's relationship especially when we moved in together. Ry struggled with the fact of who is this man taking the place of my Papa. (We lived with my parents until Ryleigh was six years old. Her Papa was the only male figure she had in her life because her sperm donation person hasn't been here since she was two. Even before then I can count on 2 hands how many times he seen her the first two years of her life.)  For a while when we'd be in public and someone say to Ken awe you have some cute kids. Ry would reply he's not our dad. My heart smiled though the day she realized Ken wasn't going anywhere and accepted the way things were on her own. She now agrees her daddy has cute kids. She tells everyone he is her daddy. And today my heart smiled even bigger when I seen her  plaque from school that said Happy Mothers Day on the back was signed RYLEIGH E.

E is the beginning of Ken's last name. :)

Q & A

I have been asked a few questions, whether it be on here or people who have followed me on Google Plus, Facebook or Twitter.  I have been planning to make this post for about a week now. Lord have mercy just about everyday this week something has come up. Not only that but still dealing with the pain from having a tooth extracted. However, there are three questions that have been asked quite a bit therefor I will answer them three now.


1. Does your children's fathers have anything to do with them? 


  • This question in a sense is one of my favorites because it gives me a chance to actually explain the situation coming from the person who actually knows the truth.  To answer this question as a simple answer it would be NO. If you would ask their dad's it would be "She keeps them from me."  Do I keep my kids from their dads.  No I have never kept my children from their dads.  My daughters dad hasn't seen her since she was two years old. My son's dad is more of a convenient dad. When it was on his time? However, I have been called every name in the book by both men who have chose to walk out of their children's lives but have no one else to blame but themselves so they blame me.  My daughters dad knows that I live in the same spot that I have since the day that I had Ryleigh as well as my sons dad. Whom my sons dad is prison again. The first time he was in prison we wrote back and forth. He gets out after promising to step up his game. It took him a week to call me after he got out of prison. Then after that phone call which was a decent phone call no fighting, nothing. I hadn't heard from him. I think a lot of that is because he talked to Brayden. When he told Brayden that "Daddy Loves and Misses You". Brayden is smart and knows he hasn't been in the picture therefor Brayden replies you aren't my daddy and I don't miss you! Then asked to speak to his brother. Brayden will tell you his daddy is Ken. Ken has been in the picture for 4 years straight almost, will be in November.   Ryleigh after being with and living with Ken for almost 2 years finally realized and accepted that her real dad wasn't coming back around. She finally accepted after some trials and tribulations that Ken wasn't going anywhere. She began calling him Ken Daddy. 
2. Speaking of Ken, the next question when are you and Ken aka Ken Daddy getting Married? Or do ya'll plan on getting married. 

  • Yes, we plan on getting married. we were shooting for this year but not sure if that will be possible because right now Ken has had an interview with a very big company and hoping to get on there. If that happens that will put us back a few months trying to catch up bills. Weddings cost money! However, we have talked about when he does get this better job possibly getting married at the court house then going and having a wedding next year. 
3. Is there a reason you aren't going to hair school anymore? 
  • There is a lot of reasons why I am not going back to hair school. Some in which I can't discuss or write about right now. A lot of my decision was base don the fact that students were teaching students how to do hair. That's not at all how that is suppose to work.  Then after figuring and what not until we can get ken a better paying job we couldn't afford for me to go the school that I have always dreamed of going too.  However, I WON'T give it up. Just sometimes, most of the time life happens and you have to pick your priorities.

Morning Routine

In reality and middle of all the chaos, I don't really have a set routine. My kids are like me and very rarely eat breakfast. (Yes, I make my kids breakfast if they are hungry in the morning!) I as well am human and have ran late in the mornings.   Lately I have been waking up between 6:30 & 7. More toward 6:30, especially on Wednesdays and Thursday's, mainly because my dad switched jobs awhile back and actually has time off during the weeks. Wednesday's and Thursdays and instead of setting a very loud alarm usually my mom will sleep in the other so in the mornings when she has to get up she doesn't disturb him. Therefor I am my mothers alarm but not for long because summer break is right around the corner. Usually once I get the kids dressed, fed if they wanna eat, and out the door by 20 til 8 on mornings they wanna eat breakfast at school. Other mornings we leave 10 minutes until 8. The routines aren't really routine. My blog wouldn't be named Occasionally Chaotic if I was strictly to the T all the time.  

Once the kids are off to school, if I have errands to run, the mornings is when I'll do them. I don't normally have something to do everyday but this week I have. The dentist I went Monday, went and picked up a few items Tuesday, helped my mom today and dance for Ryleigh. Tomorrow is another day but it's an unexpected day for an errand.  Friday is bill day. 

Okay, back to the normal routine. I start laundry. I do sit and watch TV for a bit to finish waking up because let's be serious who in their right mind likes waking up at 6:30 am every morning? Not I, but I am a mom and that's what I do. 

After I get chores done around the house and some outside such as picking up things I see obvious in the yard that needs not be there or just simple cleaning sweaping off the porch. Usually by time the morning is gone it's more up in the air that afternoon. 

Seriously tho, it's end of the school year, dance year is ending, and summer activities and TBALL starting. My life isn't always chaotic just occasionally.  But the coming up morning will catch some photos of what we do.
